The tiny island of Holbox (say ‘ol-bosh’, or Mexicans don’t know what you’re talking about), is a short ferry ride off the north coast of Mexico’s Yucatan Peninsula and a million miles from the glitzy Vegas-style resorts of Cancun and Playa del Carmen.
